Gluten Free Muffins  

 

 

Bran Muffin- ingredients: 2cups brown rice flour, 3tsp. baking powder, 3tbs. maple syrup, 1 lg egg, 1 cup milk, 4tbs. butter. Mix- in one bowl all of the dry ingredients, and in another bowl mix the wet ingredients; pour the wet into the center of the dry mixture, mix together pour into a greased muffin pan and bake at 350 degrees for about 15 minutes.

 

Banana Nut- ingredients: 1 ½ cups gluten free flour, 3Tbs. flax meal, ½ cup brown sugar, 1tsp. baking powder, ½ tsp. baking soda, ¼ tsp. salt, 1cup smashed bananas, 1 leg egg, ¼ skim milk, 3Tbs. canola oil, 1tsp. vanilla extract, 1/3 cup walnuts. Mix- dry ingredients in a separate bowl and then the wet ingredients pour in greased muffin pan and bake 350 degrees for about 20 minutes.

 

Cheese Muffins – 1 ¾ cup gluten free flour, ½ tsp. vanilla extract, 1 tsp. baking powder, ½ tsp. salt, 2Tbsp sugar, ¾ cup grated sharp cheddar cheese, 1 lg egg, 1 cup skim milk, ¼ cup butter.  

Mix – dry separately and then wet ingredients, mix pour into a greased muffin pan and bake at 400 degrees for 22-25 minutes; remember to gently fold in the cheese into the wet mixture.

 

Zucchini Bread – 3 cups grated zucchini, 1 cup chopped dates, 1 cup brown sugar, 1 cup white sugar, 2 tsp. vanilla extract, 6 Tbsp. butte, 3 large eggs, 3 tsp. cinnamon, 2 cups gluten free flour, 1 tsp. baking powder. Mix- dry ingredients and then the wet ingredients, mix together, pour into a greased muffin pan and bake at 350 degrees for 20 minutes.

Eating gluten free may be for medical reasons but it is a great alternative for anyone that wants to eat healthier. Making your own food is the best way to ensure that the food you are eating is gluten free. Read the labels of everything before buying and use organic products as much as possible. Taste does not have to be sacrificed for health, and flavor is possible even with restrictions. There are many websites and books available that offer alternatives for a restrictive diet and as long as there are fruits, vegetables and gluten free flour and other products, a gluten free lifestyle can be as satisfying as any other lifestyle. There are also great breads and cakes that can be made with the same ingredients that were used to make the gluten free muffins, all natural is so delicious and it keeps the body healthy and ready to take on the next day.
